Holiday drinks, made plant-based
Vegg nog, gingerbread cocoa and maple mulled cider, all without the dairy or the egg.
The BetterDay Kitchen2 min read
Every holiday drink worth having is built on dairy, eggs or both, which is a nuisance if you have cut those out. All three of the classics swap cleanly, and one of them is arguably better for it.
Vegg nog
We are still trademarking that name. You can buy plant-based nog at almost any Calgary grocery store in December and it is genuinely good, so start there if you are short on time.
Making it is better. A blender nog built on cashew and almond milk, sweetened with maple syrup and spiced with cinnamon and nutmeg, comes out thicker and less cloying than the carton. If you cannot have nuts, oat milk with a tin of sweetened condensed coconut milk does the same job.
The version we make:
- Easy Vegan Eggnog, Minimalist Baker
Six ingredients, one blender, no cooking.
Gingerbread hot cocoa
Swap the milk for oat milk, which steams better than any other plant milk, then build the flavour with cocoa powder, vanilla, maple or agave syrup and a teaspoon or two of the spice mix below. Whisk it over medium heat rather than boiling it, because cocoa goes bitter when it catches.
Maple spiced mulled cider
The better cold-weather move than mulled wine, and the one we make once the temperature drops below minus twenty, which in Calgary is most of the winter. Apple cider goes in a pan on low with cinnamon sticks, cloves, vanilla and orange, maple syrup to taste, and twenty minutes of patience. Add spiced rum at the end if it is that kind of evening.
The recipe we follow:
- Maple Spiced Mulled Cider, Cupful of Kale
Twenty minutes on the stove, rum optional.
Everything else
Most holiday cocktails convert with three swaps. Change the sweetener if it is honey, change the dairy for a plant milk with enough body to carry it, and change egg whites for aquafaba, which is the liquid you normally pour down the drain when you open a tin of chickpeas.
The recipe
Gingerbread spice mix
The mix behind the cocoa. Five minutes to make, and it carries a whole winter of hot drinks, oatmeal and baking.

Makes
About 1/2 cup
Ingredients
- 2 tbsp ground allspice
- 2 tbsp ground cinnamon
- 2 tbsp ground ginger
- 1 tbsp ground cloves
- 1 tbsp ground nutmeg
- A pinch of ground black pepper
Method
- 1Tip everything into a clean jar.
- 2Seal it and shake until the colour is even, about 30 seconds.
- 3Use 1 to 2 teaspoons per mug of cocoa, or a teaspoon in a bowl of oatmeal.
Keeps
Sealed jar in a cool cupboard, about 6 months before it starts to fade
Chef’s note
The black pepper is not a typo. It does not read as heat, it just makes the ginger land harder.
