Our Signature Vegan Queso

15-Minute Vegan Queso


Here you have it, a 100% plant-based vegan cheese dip that just so happens to be gluten-free and Whole30 + paleo approved! It's super easy to make, healthy, and the perfect dish to whip up for game day or to serve at a get together.

Ingredients:

- ½ cup raw cashews

- 1 cup medium chunky salsa

- 1 small red bell pepper

- 3 tbsp nutritional yeast

- ½ tsp sea salt ½ tsp turmeric (optional but recommended for color)

- Splash of lime juice (optional, we love the extra ‘pop’) 

Instructions:

- Pre-soak the cashews in boiling water for 10 minutes before blending

- De-seed and chop your red bell pepper

- Add cashews and all other ingredients to highspeed blender, blend until smooth and creamy


... and done!


Feel free to garnish with chopped cilantro, sliced or pickled jalapeno, chopped avocado, or chilli powder.
